A delightful fusion of tender fish and vibrant greens. This nutritious dish is perfect for a wholesome and flavourful meal that nourishes your body!

Ingredients
- 2 boiled potatoes
- 2-4 florets broccoli
- 125g bag of baby spinach leaves, washed
- A little butter, for brushing
- 1 fillet (approx. 140g) plaice
- Salt and pepper
- 100ml semi-skimmed milk
- 1⁄2 tsp cornflour
- 60g reduced fat extra mature cheddar cheese
Method
- Preheat the oven to 200°C (180°C fan).
- Boil or steam the potato until soft – about 20 minutes.
- Meanwhile, prepare the fish. Heat a large pan and add the spinach with a tbsp of water, stirring until wilted (about 1 minute).
- Lightly butter 2 ramekins and divide the spinach between them, adding some seasoning.
- Slice the plaice in half lengthways and roll each half up like a Swiss roll and place on top of the spinach.
- Mix the cornflour with 1tbsp of the milk until smooth.
- Heat the remaining milk in a small saucepan until just below boiling point and whisk in the cold milk & cornflour mixture. Bring to the boil, whisking constantly until thickened. Add 3⁄4 of the cheese and stir until melted.
- Divide the sauce between the ramekins, sprinkling over the remaining cheese before baking in the oven for 10-15 minutes until golden and bubbling. Meanwhile, add the broccoli to the potato for the final 5 minutes of its cooking time.
- Drain the potato and broccoli and serve with the fish.
