Makes 8-10 servings.
Stage 1,2 and 3
Ingredients
- 1 tbsp olive oil
- 500g skinless, boneless chicken thighs 1 onion
- 2 tsp ginger paste
- 3 cloves garlic
- 1⁄2 tsp mild chilli powder
- 1 tsp turmeric
- 2 tsp garam masala
- 400g chopped tomatoes
- 400ml reduced fat coconut milk
- 1 cauliflower, broken into florets
- Salt and black pepper
- 2 large handfuls of fresh spinach
Method
- Heat the oil in a large frying pan. Brown chicken on both sides and remove from pan
- Add onion and cook for 3 minutes until softened, before adding the ginger and garlic and cooking for one more minute
- Add chilli powder, turmeric and garam masala and mix for one minute
- Add tomatoes, coconut milk, chicken and cauliflower and stir well
- Simmer for 10-15 minutes until the chicken and cauliflower are cooked through. Season to taste then stir in spinach
- If using in stage 1, select mainly chicken pieces and some vegetables and sauce to blend
- Serve with potato or sweet potato, pureed if in stage 1 or mashed if in stage 2. If you are in stage 3, serve with chapatti or boiled wholegrain rice
