Makes 8-10 servings.

Stage 1,2 and 3


  • 1 tbsp olive oil
  • 500g skinless, boneless chicken thighs 1 onion
  • 2 tsp ginger paste
  • 3 cloves garlic
  • 1⁄2 tsp mild chilli powder
  • 1 tsp turmeric
  • 2 tsp garam masala
  • 400g chopped tomatoes
  • 400ml reduced fat coconut milk
  • 1 cauliflower, broken into florets
  • Salt and black pepper
  • 2 large handfuls of fresh spinach


  1. Heat the oil in a large frying pan. Brown chicken on both sides and remove from pan
  2. Add onion and cook for 3 minutes until softened, before adding the ginger and garlic and cooking for one more minute
  3. Add chilli powder, turmeric and garam masala and mix for one minute
  4. Add tomatoes, coconut milk, chicken and cauliflower and stir well
  5. Simmer for 10-15 minutes until the chicken and cauliflower are cooked through. Season to taste then stir in spinach
  6. If using in stage 1, select mainly chicken pieces and some vegetables and sauce to blend
  7. Serve with potato or sweet potato, pureed if in stage 1 or mashed if in stage 2. If you are in stage 3, serve with chapatti or boiled wholegrain rice
