Ingredients
- 200g pork fillet, cut into thin sliced
- 1tsp reduced salt soya sauce
- 2 tsps mirin
- 2 tsps hoisin sauce
- 1/2 tsp sesame oil
- 1/2 tsp dried chilli flakes
- 1 tsp sunflower or vegetable oil
- 1 carrot, cut into thin matchsticks
- 1 green pepper, sliced
- 2 spring onions, sliced
- 80g brown rice
Method
- Mix the marinade ingredients together and add the sliced pork. Refrigerate for at least half an hour, better overnight.
- Prepare the rice by rinsing thoroughly in a sieve and then place in a measuring jug, noting down the volume, and add to a small pan. Measure out twice the volume of boiling water and add to the pan. Bring to the boil and then reduce the heat to a very slow simmer, cover with a tight lid and cook for 25 minutes (set a timer)
- Fifteen minutes before the rice is due to finish cooking, heat 1⁄2 of the sunflower oil in a frying pan or wok. Lift the pork out of the marinade using a slotted spoon and add to the pan, stir-frying for 3-4 minutes before removing to a plate.
- Heat the other 1⁄2 tsp of sunflower oil in the same pan and add the carrot, pepper and spring onions and stifry for 1-2 minutes with a tbsp of water and the marinade.
- Add the pork, cover with a lid and cook for a further 2-3 minutes.
- Serve the pork and vegetables with the rice.
