Serves 1.



  • 1 egg yolk
  • 1 tsp cornflour
  • Vanilla pod or 1sp vanilla extract
  • 100ml milk
  • Optional – 1/2 tsp sweetener – or try without



  1. Break the egg, cornflour and if using, sweetener
  2. Whisk in the milk
  3. Bring to just under boiling point in a pan with the vanilla pod (or extract), and then simmer for 3-4 minutes to cook the flour
  4. Remove the vanilla pod, if used, and serve.
