Eating a nutritious meal doesn’t have to be bland. Try this tasty teriyaki chicken stir-fry recipe that leave your taste buds happy and your belly feeling satisfied. This recipe serves 4.
Ingredients
- 2 dsp soy sauce (ideally reduced salt)
- 1 dsp Japanese rice vinegar
- 1 dsp mirin (Japanese sweet wine)
- 1 dsp sake (Japanese dry wine)
- 1 tsp toasted sesame oil
- 300g chicken thighs, cut into chunks
- Bag of mixed vegetables for stir-frying (raw weight)
- Basmati rice, cooked according to packet instructions
Method
- Mix together the soy sauce, vinegar, mirin and sake and use to marinade the chicken.
- Heat the oil in a non-stick pan and stir-fry vegetables of your choice until slightly softened but still crunchy. Remove from the pan and keep warm.
- Remove the chicken from the marinade and using a slotted spoon and add to the pan and stir-fry over a high heat until cooked through – about 5 to 10 minutes depending on the type.
- Remove the vegetables to the pan to join the protein and add the marinade, cooking 3-4 minutes more over a medium heat.
- Serve with rice, cooked as per packet instructions and enjoy.
