Serves 1.
Ingredients
- 2 large eggs
- Fillings of your choice – mushroom, lean bacon (fat removed), tomatoes, cheese, smoked salmon, herbs
- Salt and pepper
- 1 tsp oil
Method
- Break the eggs into a small bowl and beat with a small pinch of salt and pepper
- Heat the oil in a small non-stick frying pan
- Pour the eggs into the pan, then tilt the pan ever so slightly from one side to another to allow the egg to swirl and cover the surface of the pan completely. Let the mixture cook for about 20 seconds then scrape a line through the middle with a spatula.
- Title the pan again to allow it to fill back up with the runny egg. Repeat once or twice more until the egg has just set.
- Add your choice of filling and fold the omelette in half with a spatula.
