Turn your Christmas leftovers into a flavourful bariatric friendly sandwich.
Makes 1 sandwich.
Ingredients
- 1/2 slice of wholegrain multi-seed bread or 1/2 pitta toasted
- Red cabbage
- Slice of ripe avocado spread as butter or 1 tsp extra light mayonnaise
- 1 slice turkey (or Quorn if vegetarian)
- Watercress or rocket
- 1 tsp cranberry sauce
Method
- Spread the avocado spread (or extra light mayonnaise) and cranberry sauce over the slice of wholegrain multi-seed bread (or pitta).
- Layer the red cabbage and turkey (or Quorn) on top of the cranberry sauce.
- Garnish with water or rocket and enjoy.
