Ingredients
- 1 red pepper
- 4 cherry tomatoes
- A few basil leaves
- 1 garlic clove, chopped
- 1 tsps pesto
- 2 balls of reduced fat mozzarella
- 80-100g cooked bulgur wheat
- A few olives
Method
- Halve the red pepper and de-seed
- Place cut-side up on a baking sheet, place 2 cherry tomatoes, half the garlic, a few basil leaves, a tsp of pesto and a ball of mozzarella in each half
- Bake for 30-40 minutes until soft and slightly charred on the outside. Serve with the bulgur wheat and a few chopped olives
