Savour the delicious blend of flavours in our chicken sausage & bean salad – a satisfying and wholesome dish. Packed with protein and fresh ingredients, it’s a perfect choice for a light yet satisfying meal.

Makes 1 serving.

Stage 3.

Ingredients

  • 1 chicken sausage
  • 1⁄2 tbsp olive oil
  • 1⁄2 garlic clove, crushed
  • 1⁄2 a tin cannellini beans
  • 1⁄4 small red onion, thinly sliced
  • 25g baby spinach
  • Zest and juice of 1⁄2 lemon
  • Salt and black pepper, to taste

Method

  1. Preheat the grill. Place the sausage on a roasting sheet and put under the grill for 5 minutes on each side, until cooked through and golden. Cut into thick slices.
  2. Meanwhile, put the olive oil and garlic in a wide saucepan and heat gently for 1 minute. Stir into the cannellini beans and sliced onion. Season with salt and black pepper and continue to cook over a low heat for 5 minutes to soften.
  3. Remove the pan from the heat and toss in the sausage, along with the spinach and lemon zest and juice.
  4. Transfer to a bowl and season with salt and pepper
