Packed with protein and bursting with flavour, they’re a delicious twist on a classic favourite.

Ingredients
- 1 tsp sunflower or vegetable oil
- 1/2 a red onion, diced small
- 1x pepper, diced small
- 1x tomato, diced small
- 1 tbsp pickled jalapeños (optional), chopped
- 1x 130g tin of tuna in spring water, drained
- 1 tsp fajita seasoning
- 1/2 a small avocado
- Squeeze of lime juice
- 2x mini tortilla wraps or taco shells, ideally wholemeal
Method
- Heat the oil in a frying pan. Add the onion and pepper and fry until softening and beginning to turn golden brown at the edges (5 minutes)
- Add the diced tomato and cook for a further minute
- Add the tuna, jalapeños and fajita seasoning and stir thoroughly, cooking for a further 3-4 minutes until the tuna is heated through
- Mash the avocado with the lime juice
- Smear the avocado on the wraps and then add the tuna mix
