Stage 3


  • 1 red pepper
  • 4 cherry tomatoes
  • A few basil leaves
  • 1 garlic clove, chopped
  • 1 tsps pesto
  • 2 balls of reduced fat mozzarella
  • 80-100g cooked bulgur wheat
  • A few olives


  1. Halve the red pepper and de-seed
  2. Place cut-side up on a baking sheet, place 2 cherry tomatoes, half the garlic, a few basil leaves, a tsp of pesto and a ball of mozzarella in each half
  3. Bake for 30-40 minutes until soft and slightly charred on the outside. Serve with the bulgur wheat and a few chopped olives
